I’m having a can of chili beans with an egg and some shredded cheese mixed in while it was heating up.

I had eggplant salad which is a traditional thing. Confusing name cause it's more like a spread. You slice and fry eggplants until golden brown. Then into the food processor along with 1 clove of garlic, 1 tomato, salt, lemon and 1 spoon of peanut butter.

Traditional where? It sounds interesting! Is there another name for it? (Didn't find anything similar by searching "eggplant salad").

Sounds like a variation of Baba Ghanouj, Lebanese dish. Baba Ghanouj Is made with Tahini instead of peanutbutter.
