My issue with both of them is that they don't seem to offer hierarchical organization.

Do you mean this? Hierarchical Notebook work perfectly fine in Joplin.

I don't know how you got this screenshot, nor do I care by this point. I've spent 5 minutes trying to get folders to work with 0 results. If Joplin can't be bothered to make this resonable to do in their app, then I can't be bothered to use it

Huh? Folders are called notebooks in Joplin and when creating a notebook you can select a parent notebook. It was pretty straightforward for me. Maybe this has been added after you tried out Joplin.
