Yes maybe the orange zest would work better. I think the original recipe had a flamed zest, but I didn't dare try it!

I'm in the same situation with eggs, I don't have many yolk-only recipes. I do make hummus a lot though, so I have plenty of aquafaba.

It is not exactly as smooth as egg white, but it still works well for me. At least for sour cocktail, I'm not sure how well it would work for a fizz. It is easier to measure too, so the amount of resulting foam can easily be adjusted. I also have some vegan friends so it is a nice bonus!

 
  • 50 ml Rum (Havana club 7y)
  • 15 ml Bénédictine
  • 15 ml Lemon juice
  • 10 ml Simple syrup
  • 15 ml Aquafaba
  • 2 dashes orange bitters

Shake everything with ice, remove the ice and shake one more time, and serve with a bit of cinnamon on the foam.

Definitely not a summer cocktail, but the weather here has been rainy and grey, so I have to adapt! The rum and Bénédictine combination works really well, and the smell of cinnamon is nice. I'm not sure I fully taste the orange bitters though, maybe it would have been better on top of the foam with the cinnamon.

Switching Campari for Aperol, or the other way around, is the main change I do. I like the bitterness of Campari, but my wife usually prefers Aperol, so it is an easy way to make the same cocktail work for the 2 of us!

I also usually bump the lemon/lime quantity a bit, as I rather the cocktail be on the sour side. But it might also be because the citrus we get here are not that great...

  • 20 ml Passion fruit syrup
  • 30 ml Mezcal
  • 15 ml Aperol
  • 20 ml Lime juice
  • Sparkling water to top

Shake everything with ice, dump directly in a glass with some extra ice, and top with the sparkling water.

Nice and refreshing, the smokiness from the mezcal hits first, but the sweetness of the other ingredients make it easy to drink. It's low abv too!

Orgeat from avocado pits sounds really interesting! Do you basically hit the pit hard enough to break it, and then boil it?

Never heard of Huckleberry, what does it taste like? Close to blueberries? Can't go wrong with any berries in any case haha

Maple syrup is the best! I imagine it could pretty much work in any cocktails that use honey syrup

 

Hi!

I'm thinking it could be fun to share some syrup ideas, for cocktails or simply with water. What are your favorites? Homemade or commercial, classic or unique :)

For me, I usually have orgeat (with almonds, I haven't tried with other nuts yet) and honey syrup in the fridge. I do also love ginger syrup and passion fruit syrup. I have tried lavender syrup, which was a bit disappointing, but it might have been overstepped.

 
  • 45 ml Rum
  • 20 ml Cognac
  • 60 ml Orange juice
  • 30 ml Lemon juice
  • 15 ml Orgeat

Shake everything with ice and serve with crushed ice.

Nice summer cocktail, with the juice and almond. Not fully sure if the cognac makes it through though, maybe replacing it with more rum would be just as good.

 
  • 60 ml rum (I used Appleton Estate)
  • 30 ml lime juice
  • 30 ml banana syrup

Shake and serve.

It's getting warm here, so it's daiquiri time! I made some syrup from banana peels (mix sugar and banana peels, and let it rest for a few days. No need to heat it up), so I was excited to try it. It goes really well with the aged rum!

 
  • 60 ml dry vermouth
  • 20 ml Bénédictine liqueur
  • half barspoon absinthe

Stir with ice and a lemon peel. Serve with a lemon twist.

I just bought a bottle of Bénédictine, and I was excited to try it in a cocktail, as I really like it straight. This works well with the vermouth as a aperitif drink.

The absinthe is strangely not that noticeable, even though it usually tends to be one of the first flavor I taste. I might increase it a bit next time, as I do like it quite a lot haha.

 

It's getting warm here, so it's time for some frozen drinks!

  • 90 ml rum (I used Havana 3y)
  • 30 ml lime juice
  • handful of frozen raspberries
  • a little bit of simple syrup, depending on how tart the raspberries are.

Blend everything with some ice.

Better to make those as a batch, and adjust for taste. The frozen fruits make it hard to get an exact ratio.

Really refreshing, and the increased rum ratio is necessary to be noticeable imo. I might filter it somehow next time, so there are less raspberry seeds, it makes the texture a bit weird.

I forgot to take the picture on the balcony, but it looks better with the sun in the background ^^

 
  • 3 oz white wine
  • 2 oz campari
  • 2 orange wheels
  • top with soda water

Mix in the glass with some ice.

Had a little bit of white wine left, and I wanted to see if there was some good cocktail to use it. I'm not sure that's really the kind of drink I like, it mostly tasted like diluted campari (which I guess it is). But I could see it working on a really hot day!

 
  • 20 ml Fernet Branca
  • 20 ml herbal liquor (or green chartreuse if you can find it)
  • 20 ml lime juice
  • 10 ml simple syrup
  • 10 ml Aquafaba

Shake everything well, and serve. I'm going with metrics measurements now, so I don't have to convert them ^^

A really interesting combination of flavors, the mint from the Fernet Branca is still there, but more of an aftertaste. I can see it being better balanced with the chartreuse, since it is higher abv.

 
  • 3/2 oz gin
  • 1/2 oz grenadine
  • 1/2 oz lemon juice
  • 1/2 oz aquafaba

Shake with ice, then shake one more time without ice.

The grenadine is homemade, and not bright red, so I guess it is more of a pink-ish lady. But still a great cocktail after dinner!

 
  • 2 oz gin
  • 1 oz lemon juice
  • 1/2 oz honey syrup
  • 1/2 oz lavender syrup

Shake with ice and serve. Would look pretty nice with a piece of lavender on top, if I had planned this better ^^

A more floral variation of the bee's knees, the lavender smell is great. It could be interesting to try with elderflower or maybe violet liquor, now that spring is here!

 

Weekday dinner with a few days of leftovers :) Handmade crust, and the filling is just eggs/cream + feta/brocolis/olives.
