Are there any privacy or security issues here? Would be using this with Proton Mail, probably . . .

I use SMS/RCS. Not everyone uses Signal, and I won't install WhatsApp.

Your carrier knows the contents (and the metadata) of the RCS message since RCS messages on Androids are routed through Google only when the carrier doesn’t supports it.
