Luigi didn't do shit. He clearly wasn't the guy in the pictures at the scene, and the cops clearly planted evidence

Plenty of innocent people have been coerced into falsely pleading guilty. Sometimes it's the best legal move if you're getting railroaded.

Yes. We may still think Luigi to be innocent. But the court can no longer do so. Nor can the defense now argue for innocence.

Yeah, I'm a huge fan of Luigi getting a trial and having a happy ending. But what he said seals the deal on that one. It's all a legal battle now.

It's explicitly not a legal battle anymore. That's literally the one type of battle it isn't. A guilty plea means the only thing left for the court is sentencing. However, many people take guilty plea deals for lighter sentencing if they suspect they're going to be convicted anyway. The legal battle is over, but that doesn't mean there aren't other battles still to fight.
