Tuna melt: onion, carrot, pepperoncini, capers, mayo, brown mustard, salt, tuna, black pepper, aged cheddar, 12 grain bread.

If you aren't adding acid to your tuna then you are messing up.

If you haven't tried mayo as your bread browning agent you are screwing up. I rejected it at first but after trying it there is no doubt.

Carrots: carrots, brown sugar, salt, air frier. 12 minutes at 370f, 3 minutes at 400f.

Cost per person: $4.17

Mr. FauxPseudo, what's for dessert?

I had tuna, mayo, coleslaw on bread the other day. Tuna is underrated.

Beer, walking five kilometers, more beer. Maybe a PB&J later. Might make my own peanut butter. Not sure.

[–] MakingWork@lemmy.ca 1 points 6 days ago (1 children)

I love peanut butter and jam sandwiches. You get a pass.

So do you walk with the beer?

[–] FauxPseudo@lemmy.world 1 points 6 days ago (1 children)

I did not. It's not in my interest to get arrested for violating an open container law.

[–] MakingWork@lemmy.ca 1 points 6 days ago (1 children)

Fair point!

What's for dinner today?

[–] FauxPseudo@lemmy.world 1 points 6 days ago (1 children)

I haven't figured that out yet. I'm about to go into the kitchen and start thinking of what I've got to work with and ask my wife if anything sounds good.

I'm craving a BLT and some fries but that's not remotely in the budget. Maybe some kind of Pasta e fagioli? I could make it early and eat it cold for dinner.

[–] MakingWork@lemmy.ca 1 points 6 days ago (1 children)

Just Google what pasta e fagioli is. Pasta soup.

[–] FauxPseudo@lemmy.world 1 points 6 days ago

More like bean and pasta. And definitely more spaghetti consistency as opposed to a soup

[–] ulemmyagain@lemmy.world 2 points 6 days ago (1 children)

that bread looks dope. I like pickle juice for acidity in my tuna salad

[–] FauxPseudo@lemmy.world 2 points 6 days ago

I don't add any juice but I have definitely added pickle relish or in this case pickled pepperoncinis.

We had a debate on whether to use 12 grain or rye bread for this and decided to go to the 12 grain. That browning you see Is not possible with olive oil or butter. Only Mayo can do that.

Do you caramelize the onions? Or... Raw?

[–] FauxPseudo@lemmy.world 2 points 6 days ago (1 children)

They are here for crunch and sharpness to balance the tuna. So you want them raw. Dice at a minimum, fine dice is better.

[–] Krusty@quokk.au 0 points 6 days ago

I like cut cutting a thick slice. Call it a slab of onion. Yummy

[–] Krusty@quokk.au 0 points 6 days ago (1 children)

I would do this except with canned salmon. Tuna is so dry... No where near the n-3 in salmon.

[–] FauxPseudo@lemmy.world 2 points 6 days ago (1 children)

I have a can of pink salmon in the cabinet that eventually I'm going to do something like this with. But I always forget about it.

In a tuna melt you need the dryness. You can't have any juice soaking through your bread. I go so far as to dry the pepperoncinis after I mince them, pressing them with a paper towel.

It's the meat itself. Tuna is generally quite low in fat. Salmon is rich in essential n-3 EPA and DHA, plus tuna has heavy metal issues, which is great musically but not dietarily.

[–] FauxPseudo@lemmy.world 2 points 6 days ago (1 children)

We were recently gifted a large amount of tuna because someone who traps cats bought tuna as bait but didn't get pop tops. I make sure to space my tuna consumption out so it'll probably take us a year to get through this stash.

I do not put any limits on my music metal intake. But as a general rule I don't listen to much that came out after The Black album by Metallica. It wasn't just a major downshift in quality for Metallica but metal as a whole degraded after that.

Tuna really isn't the best bait for cats. I like something pungent like chicken liver. I used to feed stray cats. This one had no eye balls. Midges crawling in it's eye sockets... Turned my stomach a bit. Wanna see? I got pictures. I called him buddy. I would pet the poor kitty while it enjoyed some nice wet food.

[–] FauxPseudo@lemmy.world 1 points 6 days ago

I'll skip the pictures of the disabled cat. But I understand the need to document that.

For my personal cats, I avoid fish in any form because it can cause health issues. But when I'm trying to trap cats, fish offers an irresistible smell that draws them in and increases the chance of a catch. Relevant study.

Carrots are underappreciated.

[–] Krusty@quokk.au 3 points 6 days ago* (last edited 6 days ago) (1 children)

Roasted carrots are sublime. Absolutely no need for extra sugar.

[–] BarneyPiccolo@lemmy.today 3 points 6 days ago (1 children)

Carrot cake was one of the first cakes because it was one of the few plants with natural sugar before sugar was imported from the new world.

[–] Krusty@quokk.au -1 points 6 days ago

You beet me to it. Shucks!

[–] FauxPseudo@lemmy.world 3 points 6 days ago

I add them to so many things now. Texture, flavor, sweet, savory, dirt cheap. Very flexible.

[–] dan69@lemmy.world 1 points 1 week ago (1 children)

Thanks for the carrot recipe - I got some left over to use.

[–] FauxPseudo@lemmy.world 2 points 6 days ago

I've gotten in the habit of stocking them all the time. I will find uses for them. They last forever and are cheap.
