Yeah, they're tough! I would say that both Sekiro and Bloodborne I found to be a bit kinder to newcomers than ds3. Hard to say whether they'd work better for you, although they might.
Ds3 is the first Souls game I actually beat, so it's definitely a reasonable choice for first Souls game.
I'd for sure suggest starting over, if you got stuck at Vordt, you're not super far in and won't lose much with a restart.
One thing you might want to do is not try to play these things blind. Watch a playthrough on YouTube, watch some challenge runs or speedruns, maybe even read some reddit threads, but keep in mind people on Reddit are idiots and half of what they say isn't going to be true or helpful.
And, feel free, if you like, to DM me if you get stuck, I might have a tip or two, but, well, don't count on that necessarily! I'm not what you'd call "good" at these games, I die in stupid ways to stupid stuff all the time.
