You can map multiple paths to a docker container and under settings > media management > root folders in the arrs.

All *arr apps should use root folders to organize media. If I understand the question, here's the hypothetical situation:
- Create a root folder for *Arr App.
- Download media until drive is full.
- Create a new root folder that points to different drive.
- Configure *Arr App to move new downloads to new root folder created in step 3.
You should be able to have multiple root folders, but I've only checked in So are. One problem you'll run into is that you can't break up music artists or TV show series across root folders.
You might want to consider something like OpenMediaVault or Unraid to manage your storage. Either platform (or others) allow you to add drives as needed. I don't use either so I'm just passing that along as a consideration.

Also MergerFS like mentioned above, SnapRAID, OMV, Unraid, TrueNAS, or just plain ZFS. Something to create a pool of drives will be your best bet. These all do it while some are full OSes or hypervisors and others are things you can implement in your current OS. What are you currently using for your OS?

Unraid is the GOAT for self hosting. An excellent way to learn VMs, Docker, and Linux in general. They have an "app store," which is community templates for Docker containers, and have all the *arr programs you could want. Drive management is super easy, too.
You can merge your drives into a pool with mergerFS so it looks like one big drive to your arr stacks. It's not too difficult.
