For me The Apothecary Diaries and Code Geass up there.

Attack on Titan's final season also portrays modern geopolitics very well.

It's Legend of the Galactic Heroes and it's not even close. I can't watch it right now though; one of the main villains reminds me a lot of Trump and it's too depressing.

LoGH is a masterpiece, completely uncontested in this space.

I see people mentioning Attack on Titan and Vinland Saga. Those are good shows. 86, Chi (Orb), and various Gundams are worth considering too, but none of these can compete with the sheer scale of Legend of the Galactic Heroes.

Can't go wrong with most Gundams.

Personally, I'd choose Vinland Saga.

Plenty of peak recommendations in this thread by the way.
