I don't know the pods you're looking at but unless they're instant coffee they definitely go bad. I got tons of undrinkable bulging pods from Amazon and have visited tons of people that have years old boxes for gusst... You get the point.
That's not to knock the extra sleep and convenience. Just expect to have to deal with expiring pods and just ok and sometimes not great coffee.
When I was doing it(for the same reasons), I kept some pour over and cold brew options around for the weekends when I wanted to enjoy the ritual and take the time to sit with a good cup.
