A farm that actually lets me do environmentally friendly practices without going full on sci-fi.

Silvopasture, Agroforestry, Aquaponics comon let me do that!

I'd love to see a Tabletop store simulator. Selling boardgames, RPGS, TCGS, miniatures, and snacks while dealing with organized and casual play.

This should fill the bill for you, and it has great reviews. I can confirm that it’s pretty fun.

Trading Card Simulator

I really like this game, and I'm hoping they add in the other parts, but they are looking at the store through a very specific lens. I want it to have a mechanic for trying to guess product hype. Will this new game be popular? How much should we invest in this wave of tcg product. Have older sets fall off, etc.

Just do MTG presales and rake in the money

A datacenter. Probably really boring, but datacenters appeal to me. So designing and managing one would be nice. There is a sort of option in Software Inc. But the focus there was/is more on developing software than on the datacenter aspect.

The closest I've seen was the server room in Mad Games Tycoon 1/2, but it was pretty basic.

Now that I think about it, you could probably do a pretty good data centre management game. In addition to building/managing/expanding your data centres, I would also like an in-depth business component where you are a cloud service provider and you would have to pick business strategy and specializations (which would link in with what you built).

You can even do scenarios like being a small CSP in Europe, and you would have to compete against foreign hyperscalers while trying to capitalize on political instability in their home country and newfound interest in local CSP services.

Nah, I'd play it.

I'm a musical theatre and marching band and choir kid at heart. I'd like to see something for non-rock, non-pop music. I like both genres well enough, don't get me wrong, but how about an orchestra for variety? It could be realistic with very low budgets and (I think) profit margins, or not so with the ability to make lots of profits like with most tycoon games. And musical theatre could be half music management, half regular theatre. Or just regular theatre would be cool too.

A good modern version of Pizza Connection/Pizza Tycoon (or the sequel). I first played it in 1997 and it felt pretty advanced. I can imagine it was even more unique on release in 1994.

We have a large selection of restaurant management games, but none of them are as good as Pizza Connection (even if they have their own thing going).

Aquarium / aquatic nature center. Balancing the needs of the animals vs the needs of the visitors. Chasing grant money by doing research vs chasing admissions.

nail salon
I've always wondered if I'd be any good at managing one IRL but not enough to actually try IRL, which is how I tend to enjoy industry sim games lol
