Immich is an open source and self hosted Google Photos alternative. It's apps are extremely polished and a viable alternative.

Love the idea, but it seems complicated in regards that you need access to your own server

Yeah it's surely not for everybody, especially if you don't have the technical knowledge. But think they plan a managed service.

Or collaborate with server providers for a more seamless product? I’d consider paying for that, but many cloud services are already offering this in some kind

There are some systems like TrueNAS that already allow an easy install of Immich as an app but you are right. It would be awesome if you could easily install it on a hosting provider of your choice without much technical knowledge.
