I really don't like nonstick pans. I love my CI and CS pans and my beloved mirror finished SS pan. I do always keep one medium sized nonstick around as they do have their utility. I replace it every two years though as no matter if it's a cheap as seen on TV one or a fancy name brand, they all loose their nonstick properties with regular use. I had enough and decided to try a non-treated titanium coated pan. I have to say, so far I'm pretty impressed. Nowhere near the performance of a freshly purchased nonstick, but a bit less sticky than SS. Where it's really shining is with cleanup. It been very easy to wash clean even when there is charring or adherence. I haven't tried yet, but I think it's going to be perfect for cold-searing. Has anyone else tried these? Does the nonstick quality fade with microabrasions over time? If so hopefully lasts longer than 2 years?

I've cooked with cast iron for many years, and a few years back, I got a carbon steel pan. Depending on what you buy, they come coated in beeswax that you need to melt off before you season it.

My thought was to handle it the same way I do cast iron (tiniest whisp of oil + hot oven through a few repetitions). I decided to follow the instructions that came with the pan, though, instead, which were horrible. They said to put like a cm thick layer of oil in the pan and bake it smoking hot for a little while. I ended up with the patchiest season ever, and I keep hoping it will work itself out, but honestly, I should have just stripped it back to bare metal right away and done it properly.

Wow, okay, interesting. Yeah I have another pan that is like a foldable camping pan, and it was coated in some stuff, indeed. Haven't used it much, but my now-seasoned carbon steel pan is my go-to, mah boi, my homes. Things just do not stick to it. 😄 And when I wash it with hot water, the water just beads and runs right off after the fat and oil has been cleaned off. It's beautiful.
