超市里大瓶小瓶的全是一级冷榨原支原味富含多种营养物质的油,但据gemini说煎炸适合使用杂质少的精炼油,因为烟点比较高。我试着拿压榨花生油来煎也是稍微一预热就开始冒烟,煎不出crust来。

当然也有可能是电磁炉或者skill issue,但我觉得油还是大问题

butter烟点比植物油还低,能用butter煎的那种是富含油脂的高级牛扒,靠自带的油就不糊了黄油只是提味的

菜籽油貌似适合高温油炸,但是不喜欢菜籽油带来的颜色和味道

煎牛排需要高油温是个误区。只要锅是用传热性好的材质,中火足够煎牛排。温度过高会煎出厚灰带。

正常的锅都是金属的导热都很好吧🤔还是说需要加大加厚来保持温度
